1. Potato pancakes with minced meat

Ingredients:

  • Potatoes – 6-7 pcs.
  • Minced pork – 400 g
  • Onions – 1 pc.
  • Egg – 1 pc.
  • Flour – 3 tbsp. l.
  • Salt to taste
  • Black pepper – to taste
  • Vegetable oil – 50-70 g

Start by making minced meat. Add finely chopped half of the onion to the minced meat, salt, and pepper to taste. Grate the second part of the onion on a fine grater, grate the peeled potatoes on a medium grater. Combine grated vegetables, add egg, flour, and salt with pepper to your taste. Knead the mixture with a spoon.

Preheat a skillet with oil. Put the dough in a frying pan with a tablespoon, like ordinary pancakes, flatten a little. As the dough starts to stick from below, put a bit of minced meat on top and dough again on top of the minced meat—grill over medium heat and cover to cook through the inside. Then turn over and fry on the other side for a couple of minutes, then cover.

2. Potato pancakes with fish

Ingredients:

  • Hake fillet – 2 pcs.
  • Potatoes – 6 pcs.
  • Chicken egg – 1 pc.
  • Bulb onion – 1 pc.
  • Starch – 1 tbsp. l.
  • Salt to taste
  • Spices for fish – to taste
  • Sunflower oil – to taste

Wash and peel potatoes and onions. Grate vegetables on a fine grater, add an egg with starch. Stir and salt to taste. Cut the fish fillet in portions, salt, and season with spices. Put the mass in a preheated frying pan with oil in a tablespoon and smooth it a little. Place a piece of fish on top of each serving. Some more potatoes for the fish. Fry on both sides over medium heat until tender, covered.

3. Potato pancakes with buckwheat

Ingredients:

  • Boiled eggs – 2 pcs.
  • Boiled buckwheat – 100 g
  • Bulb onion – 1 pc.
  • Egg (raw) – 1 pc.
  • Flour – 1 stack.
  • Mashed potatoes – 200-250 g
  • Vegetable oil – 50 ml
  • Salt to taste

Peel the onion, wash and chop finely. Fry in a bit of vegetable oil until golden brown. Then add boiled buckwheat and chopped boiled eggs to the pan. Stir, salt to taste, and remove from heat.

Add a raw egg, flour to mashed potatoes, knead a homogeneous dough. Pinch off pieces from the finished dough and roll into balls. Dip in flour and roll into a flat cake. Place the filling in the center of the cake and pinch the edges—heat oil in a skillet and fry on both sides.

4. Potato pancakes with chicken and mushrooms

Ingredients:

  • Champignons – 50 g
  • Minced chicken – 150 g
  • Bulb onion – 1 pc.
  • Potatoes – 2 pcs.
  • Wheat flour – 2 tablespoons
  • Chicken egg – 1 pc.
  • Carrots – 1 pc.
  • Sour cream – 1 tbsp. l.
  • Salt to taste
  • Sunflower oil – to taste

Peel and wash the onion. Wash the mushrooms and pat dry with a paper towel. Cut one onion and mushrooms into small pieces and fry in vegetable oil. Add fried mushrooms and onions to the minced meat, salt to taste.

Peel the potatoes and carrots, wash and grate on a medium grater. Also, grate the second onion. Combine everything, add flour, egg, and sour cream. Stir until smooth, salt to taste.

Put the mass in the form of pancakes in a frying pan with heated oil, then a little minced meat on top. A little potato mass on top again. Fry on both sides. Bring to readiness under the lid.

5. Potato pancakes with sausages and cheese

Ingredients:

  • Mashed potatoes – 500 g
  • Chicken egg – 1 pc.
  • Wheat flour – 3 tbsp. l.
  • Semolina – 4 tbsp. l.
  • Sausage – 1 pc.
  • Hard cheese – 50 g
  • Salt to taste
  • Vegetable oil – to taste

Add a raw egg to the puree, stir, and salt to taste. Then gradually add flour and knead until smooth. Cut the cheese into small pieces and the sausage into slices. Put the semolina into a convenient plate to use as a breading.

Pinch off the dough and form a cake with wet hands. Put cheese, sausage in the tortilla and cover with additional potato mass in a ball. Dip in semolina and fry in hot vegetable oil on both sides.
