Pancakes with Summer Fruit

A rich summer dessert gives a cooling effect thanks to the excellent sweet taste. They get flour from amaranth; you can also boil porridge from its seeds. Amaranth flour and seeds are sold in health food stores.

Ingredients:

For pancakes

1 cup quinoa flour
2/3 cup amaranth flour
3 tbsp rice flour
1/2 cup filtered water
1 cup organic coconut milk
Sunflower oil

For the filling

2 cups strawberry, blackberry, or pitted cherries
3 tbsp coarse sugar or zucchini
1 tablespoon filtered water

For the cream

1 cup natural cream, whipped

Cooking

  1. Preheat the oven at a low temperature.
  2. Prepare the dough for pancakes. Add quinoa flour, amaranth and rice flour to a blender with water and coconut milk. Beat until smooth. The dough should be not thick and resemble the consistency of the cream. Pour the dough into a bowl and leave for 10 minutes at room temperature.
  3. Heat a little sunflower oil or gi over a small nonstick frying pan over medium heat. Stir the dough and scoop it into a frying pan to close the bottom. Slightly tilting the pan in different directions, evenly distribute the dough throughout the surface. Fry the pancake until its lower part is golden, about 1-2 minutes, using a spatula to lift the edges.
  4. Turn over the pancake and fry until golden, another 1-2 minutes.
  5. Remove the pancake from the pan, transfer to a closed baking tray and keep in a warm oven, adding new ready-made pancakes.
  6. When all pancakes are almost ready, prepare the fruit filling. Place the berries with sugar and water in a saucepan. Cook over medium heat, stirring occasionally, until the fruit juice starts to thicken (about 10 minutes).
  7. Before serving, spread the filling over the pancakes and roll them. Gently transfer the pancakes to the plates and garnish with whipped cream on top.

It contains no dairy products if cooked with soy cream. It contains no gluten.

Stewed Apples with Dates and Cinnamon

This is a delicious homemade dish. Cooked fruits are easy to digest and help cleanse the body.

Ingredients for 2 servings

  • 2 apples. Peel, remove the core and cut into slices
  • 4 or 5 dry apricots soaked in hot water for 20 minutes
  • 4 dates, preferably “medjul” varieties, pitted. Cut in half
  • 2 cups filtered water
  • 1 tbsp maple syrup
  • 1 tbsp grated fresh ginger
  • 1/4 teaspoon crushed cardamom
  • 1/4 teaspoon crushed cinnamon

Cooking

  1. Mix all the ingredients in a medium-sized saucepan. Bring the mixture to a boil over a high heat. Reduce heat to medium or weak, cover and simmer slowly for 5 minutes.
  2. Use a scoop to move about a third of the contents, including liquid, into a blender or food processor with a blade-nozzle in the form of the letter S. Mix until puree.
  3. Transfer the puree to the pan. Serve warm.

Raw Chocolate Pudding

And, of course, you can not do without dessert. To fully enjoy this exotic pudding made from raw cocoa, digestion must work well. It’s also easy to get addicted to, so don’t get carried away!

Ingredients

1 cup water
2 pitted dates
1/2 avocado
2 fresh fig berries (if it’s not the season, take 2 dates)
1 tbsp cocoa butter
2 tbsp raw cocoa powder
1/8 tsp vanilla essence
1/4 cup Brazilian nuts

Cooking

Cooking is simple to the ridiculous. Combine all ingredients in a blender or food processor and whisk until smooth. Enjoy yourselves!
